Banana Spice Muffin Recipe
I want to share with you all one of our kids favorite snack recipes. I am sure you have a few bananas that do not get eaten and turn brown. We often do, but I also like to buy ripe bananas from the store just for these muffins. Today is a rainy day, and it's a perfect time for us to make our favorite Banana Muffins! My kids go crazy for them once they come out of the oven. I hope you guys enjoy these as much as we do!
Banana Spice Muffins Recipe
Preheat Oven to 350 Degrees F.
Combine all these wet ingredients, mix until smooth:
4-5 Ripe Bananas, mashed
3/4 Cup Brown Sugar
1/2 cup Melted Butter
1 tsp Vanilla
1 Egg
3/4 Cup Milk
In another bowl, blend or sift these dry ingredients:
2 Cups All Purpose Flour
1 tsp Baking Soda
1 tsp BakingPowder
1/4 tsp Salt
1 tsp of Cinnamon
1/4 tsp of All Spice
Combine dry with the wet ingredients, and then pour into prepared muffin tins.
I like to prepare my tins with butter and flour and this trick works great!
They pop out easily and the kids don't have to worry about peeling off the liners, and I don't have to worry about them being dropped on the floor.
Bake for 18-25 minutes, or until done.
I use the time for baking as suggested, but the trick I use to make sure they are really ready is the bounce back trick. Check the muffins by touching the top of the muffin and if it leaves a dent, then it is NOT done. Once the tops BOUNCE back up, they are done. :)
