Chicken Fingers + Penne Alfredo Recipe
My kids love Chicken Fingers + Penne Alfredo! See how I make them from scratch! Take a walkthrough with me on how I cook this meal + get the recipe! So, this weekend we visited Moxies for Father's Day and my son commented that he wished mommy could cook like Moxies. ?? And so, I am giving it a try today to deliver a simple Alfredo sauce (thanks to Knorr sauce pack) with penne noodles and with Chicken Fingers. Recipe Below!
Chicken Fingers + Penne Alfredo Recipe
Gather up these ingredients:
- 5 cups of penne noodles
- 1 package of Alfredo sauce from Knorr
- 1 Tbsp Butter
- 1 1/2 cups Milk
- 6 chicken thighs (skinless/boneless) cut these into thirds
- Salt & pepper
- Italian bread crumbs (We use western family brand) 2 brown eggs, beaten
- I want to say here, you can add any side veggie your kids like but this time we did not make one, but you could do pees or broccoli!
So here we go! Let's make dinner? with Chicken Fingers + Penne Alfredo!
Start by boiling your noodles to your desired doneness and strain them :) If you add veggies, you can steam them while you cook your pasta. Now let's get the sauce started using a yummy Alfredo Sauce. We have tried alfredo sauces in jars, pre-made but this time I wanted to see if a package could deliver a good result and It did, even better then the jar sauce we thought! So let's melt the butter, mix in the sauce and slowly stir in the milk. Heat until it boils with whisking consistently, and once it has boiled for about a minute, turn down the heat to about 2 low and put the timer on for 4 minutes, whisking constantly, but gently. As this is bubbling away, grab your 2 eggs and beat them in a bowl, pour out your breadcrumbs in another and grab your chicken thighs.Use about 6 chicken thighs and cut them into thirds, then I salt and pepper them and toss them on the board with tongs. I like to line up my workspace like this; left to right, raw chicken, beaten eggs, breadcrumbs, plate, frying pan, plate. This way I have a space for everything. Then you want to toss the chicken into the beaten eggs, as this acts like a glue for the crumbs and then place them into the breadcrumbs. Once the chicken finger is completely covered with crumbs and patted down, then transfer it to a plate. As you do this, get your pan hot, medium heat is good, with a nice layer of vegetable oil (we use sunflower? oil) and let it heat up. Once they are ready for placing on the pan, at the same time, place all you can fit onto your hot oiled pan. We love our square pan, it works great for chicken fingers and bacon! Let them cook about 3-5 minutes per side (I honestly do not time this, as I am busy mixing up more chicken for the next batch. I simply try to flip them when the edges look brown.)Continue on until all your chicken has been cooked. My kids come running when they hear what's cooking and I think I got the check for approval when they said: "Hey it looks like Moxies!" ✅ These were gobbled up so fast, and I was very happy about that.This is a great meal for both lunch and dinner. Some days I find I make what I call 'lupper' a mix of lunch and dinner around 3:30/4pm when we have been busy with projects, games etc and we have forgotten to get a real lunch on the table so we make an early dinner or late lunch.So that's a wrap guys, I hope you enjoyed this recipe and walkthrough of how I make it for my hungry kids.
