Buttermilk + Honey Pancakes are Perfect to Make While Learning About Bees with Kids
We have been learning all about honey and bees this month in our homeschool, with the new release of our Busy As a Bee Learning Pack, and we wanted to cook with honey this week as much as we could. Here is one of the recipes we have enjoyed so much, and it’s very simple to make at home with kids! Let’s get started…
This is a recipe that I have found great success with, and I have tweaked over the years, and love adding honey to! And, if you check out our Adventures in Ireland 3, you can make your own butter, and buttermilk to use in this recipe, which is so fun, hands-on and rewarding. More about that coming soon on the blog. Find that adventure here. When you are ready to make some yummy pancakes, use this recipe:
Buttermilk and Honey Pancakes Recipe
2 cups of flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 tsp salt
1 3/4 cup of buttermilk
3 tbsps of granulated sugar, or honey or a combination of the two, to your liking
3 tbsp of oil, or melted butter (we like to use butter!)
2 tsp of pure vanilla extract
2 large eggs
oil for cooking
butter and maple syrup for serving
Method:
Measure out dry ingredients into a medium bowl, and whisk together, save the sugar or honey.
Measure out wet ingredients, plus the sugar, or honey, and whip together until smooth, then pour into your dry ingredients, and whip until smooth, and fluffy. let stand a minute or two to activate the soda and buttermilk.
Heat a pan, and pour some coconut oil on top, and heat. Using a 1/4 cup measure, pour your pancakes out and cook a few minutes on each side, until lightly golden brown.
Serve with butter and maple syrup, and enjoy with a fried egg, and slice of bacon for a delicious breakfast!
