Easy Peanut Butter Rice Krispy Squares & Thankful Book

We are keeping it simple for Canadian Thanksgiving Story-time today, so we whipped up a yummy batch of our Easy Peanut Butter Rice Krispy Squares, topped with Melted Chocolate, and a dash of sprinkles, all the while reading a fun story about Pig, Elephant, and thankfulness!Easy Peanut Butter Rice Krispy SquaresSometimes it's awesome to bake up the most complicated of things, yet let's be honest, simple really is the best. Especially when there's just so many chores that ultimately need our attention, simple is what this mama needs today.Easy Peanut Butter Rice Krispy SquaresI know you can relate, so that's why I wanted to share this one with you. All you need is peanut butter, marshmallows, butter, vanilla, and some chocolate chips! Oh, and sprinkles can't hurt but if you don't have them, that's ok. Here's the recipe:

Easy Peanut Butter Rice Krispy Squares

  • 35-42 large marshmallows
  • 2 tablespoons of butter

Put those in the pot, and let them melt.Then add in:

Mix this all together until its combined, and starting to bubble. You do need to constantly stir or it could burn! Keep your heat on a low to medium temperature.

  • Then add in your 5-6 cups of Rice Krispies and stir it up!
  • This is my favorite part, it's almost done!

Easy Peanut Butter Rice Krispy SquaresButter your dish, pour in your heavenly mixture, then pat it down slightly.Grab about 1 cup of chocolate chips and pop them in the microwave, for about 30 seconds and then stir, until you have a nice bowl of melted chocolate. It's always better not to overcook your chocolate in the microwave, and I mixed the chocolate after only 30 seconds in the microwave and as I mixed, the heat of what was melted already, melted the rest.Easy Peanut Butter Rice Krispy SquaresUsing a spatula, spread the chocolate on top of your Peanut Butter Rice Krispy Squares and add a bit of sprinkles after that. Let it cool and harden slightly before serving with your chosen storybook of the day! (It's so yummy when the squares are still warm and the chocolate is slightly melted.)Easy Peanut Butter Rice Krispy SquaresWe just love all the books by Mo Willems, and this one "The Thankful Book" was a great read, perfect for this Thanksgiving Season.
