It's been a combination of many over the years, and I'm glad to share it with you, just in time for Mother's Day!
Fluffy Pancakes for Mother's Day
I like to double this base recipe for our family of 5. This is good for 3-4 people.
Ingredients Needed:
In a medium bowl:
- 1 1/2 cups of all purpose flour
- 4 tsp baking powder (secret for the fluffiness)
- 1 pinch of salt
- 1 tablespoon of sugar (optional)
In a large bowl:
- 1 tsp of vanilla
- 1/4 cup of melted and cooled butter
- 1 1/4 cup of milk
- 1 egg
Additional ingredients:
- Blueberries (fresh or frozen)
- Chocolate chips
Method for making fluffy pancakes
Start by combining your dry ingredients; flour, baking powder and a pinch of salt in a medium-size bowl. Mix together with a whisk. In a large bowl, combine your wet ingredients; egg, milk, vanilla and cooled melted butter. Whisk together until smooth.Slowing add in your dry ingredients to your wet.Use a wooden spoon, and try to not over mix as that can lead to tuff pancakes. We want fluffy ones!I like to pour some of the plain pancake batter into a smaller bowl and add in the blueberries or chocolate chips, for a separate batch of those.
Cooking your pancakes
Heat a skillet or pan on medium to low heat, with butter or coconut oil.Pour 1/4 cup of batter into your hot pan, and let it smooth out on its own. Cook for a few minutes on each side flip when the bubbles form.If your pancakes are browning too quickly, I like to turn down the heat slightly. Use a spatula to flip your pancakes and set on a plate when complete.
Time to serve:
I like to fry up an egg or two and some breakfast sausage as well to really complete this weekend brunch. We love to use 100% pure maple syrup, and this can lead to some fun discussions about how maple syrup is made. These pancakes are very fluffy and really great! If you make these, let me know how they turn out, tag me @scissors.and.glue!Til next time,Have fun with scissors and glue and fluffy pancakes too!
