While reading Winter Snow Fun by Wendy Dunham and Michal Sparks I have been inspired to pull out one of the Best Christmas Cookie Recipe I have ever tired, and my family agrees! This recipe is special, and it's actually found in our Build Your Masterpiece Class ~ Adventures in Italy, with the Christmas in Italy bonus unit, but I am sharing it with you today, because we love it, and had to pair it with this sweet and lovely winter themed book, that is a gem! The Best Christmas Ricotta Cookies - A Book Inspired Recipe

Ingredients Needed:

  • 2 cups sugar
  • 1 cup butter, softened
  • 2 cups (500g) ricotta cheese
  • 2 tablespoons vanilla extract
  • 2 large eggs
  • 4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • And a copy of Winter Snow Fun by Wendy Dunham and Michal Sparks

For the Icing:

  • 2 cups powdered sugar
  • 3 tablespoons whole milk
  • Christmas sprinkles for decorating, or crushed candy cane bits (what we did this time)

Method for making The Best Christmas Ricotta Cookies with your kids:

Preheat oven to 350 F, then, in a large bowl, or electric mixer, cream your sugar and soft butter until smooth. This is one of my favorite steps.Add your ricotta cheese, vanilla extract...and your eggs until combined and fluffy.Slowly, add in your flour, baking powder, and salt. Then, beat until a dough forms. This dough will smell like heaven, and tastes even better!Using a tablespoon, drop your dough onto a lined cookie sheet, with about 2 inches between each cookie.Bake your Christmas Ricotta Cookies for about 15 minutes or until lightly golden. The cookies will be very soft. Allow cookies to cool completely before icing.For the Icing:In a small bowl, stir powdered sugar and milk until smooth, and add 1 tsp of vanilla extract. With a small teaspoon, spread icing on your beautiful cookies. Decorate with Christmas sprinkles or crushed candy cane! Set cookies aside to allow icing to dry completely.Storage Suggestions:Store the cookies in an airtight container. The cookies do not need to be refrigerated.
