Healthy Banana Cookies - A Book Inspired Recipe

If you follow us on Instagram, you may have seen our post about this book and how it was very helpful for my 4-year-old, to reinforce choosing healthy treats, and also asking first.Maybe it was a mix between us coming off a huge candy high from trick-or-treating, or what, but I was in the mood to whip up some healthy treats, and this was it! Method for Making these Healthy Banana Cookies
Start by preheating your oven to 350F.Combine your mashed bananas, egg, coconut sugar, and vanilla together in a medium-sized bowl, and whip up until combined. I left the bananas a little bit chunky.Next, add in your oats, shredded coconut, and sliced almonds, spices, and baking powder, then mix until combined.
Then, peel and grate your apple, and add that to the batter, and stir.Next, finely chop your raisins, and begin soaking them in a bit of apple juice, or any fruit juice you have on hand.Once your raisins have softened, a few minutes later, squeeze out the liquid, and add them to your batter, and stir up.You are ready now ready to place spoonfuls of batter onto your prepared or lined baking sheet. Put your heaping tablespoons of cookie batter onto your sheet.Bake your cookies in the oven for 11 minutes.Cool them on the rack for a few more minutes, and store in an airtight container for a few days, and freeze for up to 3 months!
