Sticky Swamp Quiche from Ollie's Cookbook - A Lunch Kids Love!
Since reading Ollie the Boy Who Became What He Ate, by Ollie's Edible Adventures, and downloading our free cookbook after subscribing to the Ollie Club website, we have been trying out the recipes and giving them a try with the kids. Today we are cooking up some Yummy Sticky Swamp Quice, and my son just loved them, and gave them two thumbs up!

I will be the first to admit that we totally have picky eaters, and it's been a struggle! But not to fear, because now that we have met Ollie, his food-fueled adventures have been helping our kiddos be brave to try things they wouldn't have touched before! Like when we read Ollie's Storybook and ate blueberries, or when we made egg holders out of tinfoil to eat them excited about boiled eggs for breakfast, with toast and fresh fruit, or the time when we made pasta with salmon and veggies, and my youngest loved it!Today I'm attempting the Sticky Swamp Quiche, but I'm not going to lie, I kinda altered it just a bit. I didn't have some of the required ingredients, so I added bacon and omitted the cottage cheese, and I used a dash of Italian seasoning instead of nutmeg, and with my desire to make two muffin tins full, I used 12 eggs and 2/4 of a cup of milk, so really I suppose I created a whole different recipe altogether, which I will share with you if your curious, but overall this was a fun recipe to start out with.
The concept of adding a story with your meal is brilliant!
This is a quiche, but because it's been named sticky swamp, it really gets the kids attention and makes them start thinking about having an Adventure in a swamp.
Sticky swamp Quiche our version
- 12 eggs
- 1/2 cup of milk
- Salt and pepper
- A few dashes of Italian seasoning
- Mozzarella and Cheddar cheese, grated and mixed
- A handful of fresh spinach leaves, ruffle chopped
- 5 mushrooms, chopped
- 1/2 of a white onion chopped
- 5 strips of bacon, sliced into small chunks
- A lug of oil
- Cooking spray
- 2 muffin tins
- 1 large mixing bowl
- 1 skillet
What to do:
Whisk your eggs, milk, salt, pepper, and seasoning and set aside. Grate your cheese and mix together.Slice and chop your bacon and start frying it on your skillet or pan.Chop your onion, mushrooms, and spinach and once your bacon has browned nicely, add in your onions.Once softened, drain the grease off into a tin can and continue cooking, by adding in your mushrooms and spinach.Cook until your spinach has wilted and mushrooms have softened.Set aside in a bowl.Prepare your muffin tins with cooking spray. (Update, the spray alone didn't really cut it, and so we tried it a second time with butter, then flour, like how I prepare my muffin tins for banana spice muffins, and they popped out so easy!)Add a spoonful of veggies to the bottom of the muffin tins, and top with a pinch of grated cheese.Then take your egg mixture and pour a small amount into each muffin cup, as full as you can go!We ran out of veggies but had lots more cheese so we filled the bottoms with grated cheese for the rest of the muffin tins and poured more egg on top!Bake in a 200C/ 392F oven for 30 minutes and we placed ours on the top rack.They will come out so beautiful and puffy!Don't despair if they fall in the middle once cooling, it happened to us and I'm not quite sure how to make that not happen.These little sticky swamp quiches work for breakfast, lunch or dinner really if you plan ahead or cook them in advance.Serve with toast and jam with fresh fruit and a glass of milk for breakfast, or a scoop of Mac+cheese and carrot for lunch! The sky is the limit really on what you can pair these. I served it with noodles but in the end, my son only wanted more of the swamp quiche! WOW, I was so happy he liked it so much.

Of course, his enjoyment of it was a bit of a surprise to me, because he LOVES Chip Chicken, and I was worried because of the spinach.... but I was so happy he liked them and ate three!The Cheese Quiche also was a hit.
